Chocolate Sponge Pudding (Fast and Fabulous)

The Pampered Chef name and hat logoThis quick an easy Chocolate Sponge Pudding is just the thing when you have lots of children to entertain (and feed) or you have unexpected guests with a sweet tooth.

Preparation is very easy and because you are using a microwave, the cooking time is short and sweet (about 9 minutes). Served hot with whipped double cream or ‘dairy’ vanilla ice cream, your guests will be wanting more and thinking you are a Domestic Goddess (ssshh, don’t tell them how easy it was)

Chocolate Sponge Pudding using the Classic Batter Bowl

Chocolate Fudge Sauce:

6tbsp golden syrup

4oz/115g light brown sugar

1oz/25g butter

3 tbsp cocoa powder

4tbsp of double cream

Sponge Pudding:

4oz/115g butter

6oz/175g self raising flour

3 tbsp cocoa powder

4oz/115g soft light brown sugar

2 eggs

4 tbsp milk

Double cream or dairy ice cream to serve

For the Sauce:

Place all fudge sauce ingredients into classic batter bowl. Microwave for about 1 ½ minutes on High. Mix well using stainless steel whisk.

Put to one side.

For the Sponge Pudding: 

Melt the butter in the micro cooker on Medium  for 1 1/2 minutes in the microwave

Add all the other ingredients and mix.

Spoon or scoop the sponge mixture onto fudge sauce

Honie’s Top Tips: When you are putting the sponge mixture on top of the fudge sauce, carefully spoon onto fudge sauce using large stainless scoop, so that it sits nicely on top.

To do this, put one scoop at a time around the edge creating an other circle which will hold down the sauce and then just put the remaining in the middle and spread about so as to cover the sauce.

Cook for 6-7mins on High

choc sponge pudding picWhen cooked, cover with a ‘large plate’ turn up-side-down and allow the sponge pudding to fall out and the chocolate sauce to cascade down the sides.

Serve with double cream or alternatively ‘dairy’ vanilla ice cream

Honie’s Top Tips:  You can pre-prepare and save the chocolate sauce and even make double to use on other tasty chocolate recipes.
